Hi Wild Bill, Your question is a valid one, it's on our implementation pipeline, but not yet out there. I'm sorry that this is my answer, even more so since Apple themselves request it: "29.4 - Apps using Apple Pay must provide a privacy policy or they will be rejected" However I'm confident that it will be done soonish.
