Please add - they have a variant of their service that allows you to use your own Amazon SES account for sending so that would be slightly different than them handling sending (which they do as well).

In the meantime, I would suggest adding a custom clause by taking the following steps:
- visit your dashboard (https://www.iubenda.com/en/dashboard),
- visit your privacy policy,
- "Add service" and "Create custom service".
